JAYTON PAUL

WINE DIRECTOR

Hailing from Jasper, Alberta, Jayton started learning about wine when he was just 10-years-old breaking down cardboard boxes at his best friend’s parent’s wine shop, Jasper Liquor and Wine Cellar.

Although he grew up around wine, it wasn’t until Jayton took a break from university to backpack around New Zealand solo that he really amassed a passion for wine. Finding himself on Waiheke Island, Jayton found work at ‘Wild on Waiheke’, a boutique winery and brewery. He also joined the harvest team at ‘Stonyridge Winery’. Now bitten by the fine wine bug, Jayton moved back to Canada to pursue wine education.

While working on wine certifications, Jayton built his reputation working the Vancouver wine scene – from the back room at the “Vancouver Magazine International Wine Awards”, to opening Chambar in 2014, and then Nightingale in 2016. Most recently, Jayton has come to Published from Hawksworth restaurant where he served as a Senior Sommelier for two years.

Jayton is currently completing his Diploma in the Wine & Spirits Education Trust through the Independent Wine Education Guild in Toronto.
