Published on Main welcomes Chef & Partner François-Emmanuel Nicol of Tanière³ for an exclusive one-night collaboration with Chef & Partner Gus Stieffenhofer-Brandson.

After first connecting through The World’s 50 Best community, the two chefs will come together to present a collaborative tasting menu that brings the flavours and ingredients of Canada’s east and west coasts to the same table.

Recognized by the MICHELIN Guide, both restaurants share a commitment to ingredient-driven cuisine, working closely with local farmers, producers and foragers to let the seasons shape every menu. Chef Nicol’s acclaimed Québec City restaurant, Tanière³, is one of Canada’s few Two MICHELIN Star restaurants, while Published on Main has established itself as one of the country’s leading dining destinations through its thoughtful, produce-forward approach to contemporary Canadian cuisine.

This one-night experience celebrates the shared philosophies of two chef-partners whose restaurants continue to shape Canada’s culinary landscape.
