Winter Tasting Menu - "Preservation"

Our Preservation tasting menu is a winter expression built around intention, patience, and the impressive power of time. Drawing from ingredients harvested at their peak and preserved through curing, fermenting, and aging, this menu reflects a season defined not by abundance, but by care and foresight. Each dish is shaped by techniques that extend flavour beyond the moment of harvest, allowing ingredients to deepen, transform, and reveal new dimensions. The result is a menu grounded in patience and precision, where preservation becomes both a practical necessity and a creative lens.

Your tasting experience consists of a ten-course menu, lasting approximately two and a half to three hours. The evening begins with an exclusive snack experience, followed by a thoughtful progression of dishes that highlight preserved elements from our extensive pantry. As with all our menus, Preservation will continue to evolve, responding to what our pantry is able to provide. Each visit will offer a slightly different expression of the season, shaped by time, technique, and the natural progression of our stores.

At this time, we are unable to accommodate the following allergies or dietary preferences for this menu: shellfish, pescatarian, allium, gluten, dairy, egg, vegetarian, or vegan menus.

To ensure we can best assess your needs, we kindly ask that you contact the restaurant directly prior to making a reservation. We require a minimum of 72 hours notice for dietary requests and can accommodate a limited number of special menus each evening. Please note that only one dietary request can be accommodated per booking.

We can hold your table for up to 15 minutes. After that, we may not be able to accommodate your reservation, as it affects the next seating. For tasting menu experiences, late arrivals may result in missed courses or a transition to an à la carte menu, with your spend credited toward your meal.

At this time, we are unable to accommodate vegetarian, vegan, celiac, egg-free, gluten-free or dairy-free menus. To ensure we can meet your needs, please reach out to the restaurant directly before making a reservation.
